We know it's not appropriate to ask someone how old they are, but if they say they've been making coffee for as long as they can remember, that might be important information. So when Don Iván - as he is called in his environment - makes such a statement at the age of 84, we raise our heads. The name Don is no accident: the Colombian farm owner is an important player in the prosperity of the entire Betulia region. The coffee fruit growing on the volcanic soil of the Andes is grateful for the in-depth attention it receives from the local producer. But this attention also benefits the other local farmers, who are helped by training and infrastructural developments so that as many people as possible can benefit from the green coffee trade.
Plantation and Processing
At the El Pescado farm, for more than 30 years and on more than 50 hectares, the ripest fruits have been harvested by hand, which after washing and peeling is followed by 22-hour fermentation and 6-7 days of drying, established after decades of experimentation, before being delivered to us, and the would arrive at our roaster.
